​My name is Doris Valdivia, I am owner and head chef of Pisko Peruvian Gourmet and Pisko LLC., with studies in Peruvian and international food, basing my experience on purely Peruvian cuisine. My grandmother Mrs. Tarcila Rodriguez was born in 1919, a time in which in Peru there were no current blenders or Modern kitchens.
My grandmother Tarcila used the BATAN (vegetable blend between river stones), wood stoves, and all the seasonings that elaborated them with the same procedure that the Inca Peruvian ancestors used, using the sun and salt as a preservative.
My Grandma Tarcila taught me how to prepare purely Peruvian food, that is how throughout my life and from a very young age, Doña Tarcila was in charge of training me in the kitchen and, like all the women in my family, how to cook Peruvian food correctly and with the arrival of Chinese, Japanese and Italian immigrants, Peruvian food merged, using their products and with the Peruvian seasonings the flavors were highlighted more since each Peruvian dish has a different preparation, as well as a different presentation.
